The Commissary is a kitchen & food business development hub located in downtown Rochester's historic Sibley Building. Our affordable, self-paced business incubator program and fully-maintained commercial kitchen offers 14 prep stations, a full line of professional equipment, marketing and sales support, and food business education.
The high costs of opening and operating a food business make it inaccessible to many members of Rochester's community, thus limiting a true representation of our city's diverse food culture. Over 60 startup and expanding food businesses are currently working from The Commissary - 51% of these businesses are BIPOC owned and 62% are women owned.
The Commissary works with food businesses of all kinds: food trucks, caterers, bakers, future restauranteurs, expanding home-based businesses, & packaged food makers.
